The Honduras Coffee Project is a collaboration between Apolis and Handsome Coffee Roasters to create a high quality coffee while providing affordable healthcare and education for the community of Siguatepeque, Honduras. The Co-op Roast coffee is roasted weekly at Handsome Coffee Roasters in Los Angeles, CA creating a cup of coffee that is clean, sweet, easy to drink, and has remnants of chocolate taffy, graham, and tangerine flavors. Co-op Roast can be enjoyed with whole milk, but does not require any additional sweeteners.

The Co-op Roast Coffee begins as cherries, mostly consisting of skin and seeds, which are handpicked at peak ripeness. The seeds are removed from the cherry, washed and then dried to first 45% and then 11% moisture. They are then milled as a parchment and tested for quality by a seed separator and infrared laser. Finally, the seeds are meticulously roasted weekly at Handsome Coffee Roasters in Los Angeles, CA.
